Yummy Berry Popsicles

2 cups berries, frozen or fresh
2 cups greek yogurt
1/2 cup of cream (optional, but very yummy)
1/2 cup of maple syrup, or homemade dandelion syrup!
2 tbs of lemon juice
1 tsp of vanilla extract

In a big bowl mash the berries, add the rest of the ingredients and stir together.

Pour the mixture into popsicle moulds, and freeze overnight.

We’re currently making our popsicles with last years frozen blackberries, and I’ve been using our homemade Dandelion Syrup instead of Maple Syrup…this is such a delicious recipe!

Georgia’s Dandelion Syrup

150 dandelion flowers (about 3 cups of petals)
6 cups water
4-6 cups white sugar (more sugar = thicker syrup)

Wash flowers and cut off the petals as close to the base as possible. Put the petals in a medium pot and cover with the water. Bring to a boil, and simmer for 60 seconds. Remove from heat, cover, and allow to steep overnight.

Next morning, strain the liquid into a sieve over a bowl. Return the liquid to pot, add sugar, and simmer on low heat for 1-1.5 hours, stirring occasionally.

Check for desired consistency by dipping spoon into syrup, letting it cool a bit, then testing it with your finger.

Store in an airtight, glass container in the fridge.

Homemade Hot Chocolate:
1 cup of milk powder
1/2 cup of semisweet chocolate chips
1/2 cup of white chocolate chips
1/2 cup of white sugar
1/2 cup of coco powder
1/4 tsp of salt

Blend everything together until your have a course powder, then store in an airtight container. Mix a couple of spoon fulls with hot water, and steamed milk. Enjoy!

Georgia loves to help me make this one. She’s really good at measuring out ingredients, while popping chocolate chips into her mouth when she thinks I’m not looking.

Banana Popsicle

1 banana
Some Nutella
Lots of sprinkles!!
3x popsicle sticks

I apply the Nutella, Georgia’s in charge of the sprinkles!

These little beauties are really fun and easy to make, the hard bit is getting them into the freezer before everyone eats them.

No Nutella at home? Try using peanut butter.

Grandma’s Oatmeal Chocolate Chip Cookies

1 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 tbsp milk
1 tsp vanilla

2 cups flour
1 tsp baking powder
1 tsp baking soda
2.5 cups oatmeal
1.5 cups chocolate chips

Cream butter and sugar together till well blended. Add eggs and mix. Add milk and vanilla and mix.

Stir together dry ingredients. Add to creamed butter/sugar mix. Mix till blended and then stir by hand if necessary. Bake at 350 till the edges are light golden.
